This is not about your girlfriend. I'd say offhand you may have some intimacy issues, but not because you want sex only once a week (everyone's sex drive is different) - rather I find it kind of odd that you would wait until she leaves to masturbate.

You might want to consider a therapist. Everyone needs a little help from time to time.
