...you start dating someone and then you get that feeling that you really really like them. like you know, not that feeling of awkwardness but you feel as if you can do anything around the other person. how long is it until this feeling happens? this new girl i'm seeing, i've only seen her 3 times and i already feel like i've known her a lifetime. it's all good and everything, but something keeps telling me that i need to know more about her before i feel like i can share everything with her.

You just answered your own question. When it is time, you will know. If its not time, you will know. There is no "specific" time span that this kind of thing takes. Its different with each person, and its different each time. Some people take years (my dad and his wife took 7 years to get to a "comfortable" spot) and yet for some people it could happen within weeks, or days, or hours even...

But to answer your question, there is no specific time, you will know when its ready.
