I prefer gas stoves over electric. We have a stove with an electric Ignition. So there's no pilot. You basically turn it to a certain point where it turns the gas on and then ignites it using a spark, similar to newer barbecues.

You need to be conscious not to leave it on, but its hardly a concern. And the gas cos put mercaptans (stinky, sulphur-smelling stuff) in the gas which you can detect as much lower concentrations than the amount of gas that would be close to dangerous. If you smell that smell, do what Mish did.
Peoples houses don't blow up from stoves, they blow up from idiots digging in their gardens or working around gas lines & not knowing what they are doing & damaging a line.
You should know where the main gas shutoff to your place is, Tone, in case of emergency (we had a minor gas line leak once b/c of some work being done on our house & had to shut ours off). It will be near the meter. They are crystals that can release a charge when struck (that's what the clicking noise is, btw).
